People have varied interests and oftentimes these aren't just mere interests. They're full blown passion.
Examine what you're most interested in and ask yourself why you shouldn't be the only one interested in it.
Write something about it.
Create the demand.
Share it with other people.
Sooner or later they too will be interested in your passion (with varying degrees of course!).
Share, share, share and you will be able to create a niche market no matter how big or small the number of people may be.
